Last nights dinner was so delicious. Fried chicken, mac n’ cheese and green beans. We love us a wholesome southern meal every once in a while. Living in Hawaii it’s hard to find some good Southern dishes. Making it at home is better anyways, you can put your whole heart into it. That’s the beauty of comfort food. We had to whip up some fried chicken to make our souls happy.
There is no better Friday than a fry day with fried chicken! Kevin makes some of the best fried chicken. The skin has a nice crunch and the meat itself is so flavorful and moist. He infuses his egg wash with sriracha hot sauce and the flour is blended with several kickin’ and tangy flavors. Straight from the cast iron to our plates and into our mouths. We enjoyed every minute of it.

It was my first time making a skillet mac n’ cheese. I looked up several recipes and couldn’t find just one. So, I took a piece of a few and formed it into my own recipe. That’s just what I do. The three cheeses I included into it were parmesan reggiano for the crust, and sharp cheddar and smoked gruyere for the actual pasta. It came out so rich. I loved the way it turned out. Unfortunately, at the end when I put it into the broiler I burned it. So I literally had to scrape the burnt panko off and add some more, then put it back for a few minutes. I’ll learn one day. Cooking is all about mistakes and learning from them. That is how you become a master chef in the comfort of your own home.
